Cheese Making

Four years ago I bought a book about cheese making and yesterday I finally did it. My friend Betsy has a "farmette" in Lyons where she has classes (along with a farm stand, goats, chickens, field to table dinners, etc.) and yesterday was cheese making. What fun and the Mozzarella and ricotta were very easy to do. I had taken out some frozen lasagne for dinner and used my mozzarella on top and loved what it didn't do - burn. I'm hooked and look forward to venturing with other kinds!
