One of the first chances for Cubans to make their own money is with palatars. They are allowed to make a restaurant in their home and cook the food. Much of the food was a disappointment because we were served what they thought we would like in both the government restaurants and in palatars. Some of the restaurants are also coops which was a split between private people and government. The other legal way to make money is to open a B&B.
